Why should I buy microgreens when I already eat a lot of vegetables?

Microgreens have a lot of benefits over mature vegetables. For one, their flavor is much stronger and intense. Secondly, the concentration of nutrients is much higher, sometimes 40% more, than in a mature vegetable. A serving of microgreens (about 1/2 cup) can have much more nutrition in it than a serving of mature vegetables. Additionally, because they are small in size, they can be added in large quantities which can really increase your nutrition in a single meal.

Are microgreens the same as sprouts/mature vegetables?

Microgreens are quite different than sprouts. Sprouts are grown in water while microgreens are grown in soil and under light. Because of this, microgreens have much more nutrition in them than sprouts do. Microgreens are much smaller than mature vegetables, harvested soon after their first true leaves form, but have more nutritional value in them than their mature vegetables counterparts.

How long do microgreens last and what is the best way to store them?

Microgreens can stay fresh for around 10 days after harvesting, depending on the conditions they’re stored in. It is best to refrigerate them soon after purchase. In order to get them moist, place them in a container with a damp paper towel.

Do they need to be rinsed?

Your microgreens will come to you unwashed. I do this because I feel as though washing them will quicken their deterioration. I usually do not wash my microgreens as they tend to be pretty clean from harvesting. But if you want to wash them, I would recommend washing just what you want to use for that meal.

How can I incorporate them into my daily diet?

Microgreens are incredibly versatile. Some ideas are sandwiches, tacos, fish, sushi, pasta, burritos, eggs, quiches, salads, protein bowls, soup, and smoothies. Lots of people like to just munch on them plain.

What are the health benefits of microgreens?

Microgreen are jam packed full of vitamins, minerals, and antioxidants. Because of their high nutritional content, they can help in prevents and ameliorating such issues as diabetes, cancer, heart disease and Alzheimers, as well as reduce inflammation, improve digestion, and support healthy brain function.

Can I freeze microgreens?

Yes. I often freeze my abundance of microgreens. These are great to go in soups, burritos, smoothies or pasta sauces. Their flavor and texture may change, but it’s a great way to preserve your microgreens before they go bad.
