Growing up, I always wanted just a little bit of what other people were eating. I couldn’t eat everything on a menu, but I wanted to taste it. I so consistently did this that my nickname was Lori Little Bit. And this is something I still do today. Probably not a lot of people appreciate it, but I do get to try a lot of different food as well as the food that I order! And I’m always happy to allow people to try my food as well.

Fast forward to today. I have dabbled in gardening for the last 15 years. It brings me joy to see food that I grew be used in the dishes I cook. There is such satisfaction in knowing that I produced delicious healthy food that tastes so much better than anything you could get at a grocery store. One AHA moment I had occurred while living in Israel. I made tomato soup for my family from tomatoes bought at a store. When we moved back to the states, I tried the same thing only to be dissappointed. The soup tasted horrible. That is, until, I used tomatoes I grew in my garden. That’s when I really realized that the produce in the stores are simply tasteless and I was determined to eat as much food from my garden as possible. However, gardening is very seasonal in Oregon and I can’t always get fresh produce. That is, until, I discovered microgreens. Now I can garden year round and always have a little bit of freshness on my plate.

And that is how liltbit microgreens began. I discovered these tiny little plants that are not only full of deliciousness, but they are extremely healthy as well. I realized I wanted to bring these to as many people as possible. Whether you want a lot, or just a little bit, I am happy to share my portion with you!

Our Growing practices

We take great care to make sure the microgreens are grown under the best conditions. We start with the best soil possible and a top-rated fertilizer, all organic. We then use some of the best seeds around and give them a few days of blackout so they can germinate.

After a few days of black-out and the seeds have germinated, we then put them under our grow lights. We use lights that produce a purple light. Why a purple light? Plants mostly utilize the red and blue light waves from light, red for plant growth and blue for leaf thickness and chlorophyll production. Using both ensures that the plants get the exact light they need for optimal growth. They stay under these lights for 18 hours a day, usually around 8 days. Some varieties take longer.

Once we are happy with their growth, we harvest and package them by hand. I oversee each step of the process, including the washing and disinfecting of the trays afterwards. To me, the whole experience is very rewarding. Seeing new growth each day is really a treat.
