Amaranth microgreens are not only beautiful to look at, but they are delicious. They are crisp yet tender and have a mild and sweet taste, with a bit of an earthy flavor. Even though they are not good for cooked dishes (such as cooking with eggs as the color will bleed into your dish), they make a wonderful topping for those dishes you want to add a pop of color too. They are delicious in salads, sandwiches or over salmon. They pair well with hummus and other dips or served over quinoa. As far as their nutrition goes, they pack a punch. They are high in complete proteins with vital amino acids. Amaranth is gluten-free, allowing them to be used in so many ways. They also contain vitamins A, C, E as well as the minerals folate, iron, magnesium, phosphorus, potassium, antioxidants and many more. Though they may not be as versatile as other microgreens, they are so much fun to play around with and use because of their unique color and their health benefits.
