Broccoli microgreens have a more subtle taste, yet that doesn’t take away how nutritious they are. They are full of essential minerals, calcium, iron and loads of antioxidants. One compound, sulforophane, which contributes to it’s slightly bitter taste, is most concentrated in the microgreen stage of formation and activates your bodies production of antioxidants. These are definitely some microgreens you want on hand. They are great is most anything you eat, but I particularly like them in salads and sandwiches.
